Exhibition in Brisbane feels like what happens when food nerds turn full scientist. Their grasp of time, fermentation, and transformation, runs so deep it borders on madness; in the best possible way. It's not just cooking; it's extracting hidden layers and applying the same obsessive mastery across every dish.
From making their own sake to distilling dill oil to crafting their own cereal based miso. Exhibition in Brisbane is pure craft. The kind of craft that makes you wonder why Australia doesn't do Michelin stars, because if they did, this place would have them. Even if, like the best, they do it for the love of the game rather than a sign on a wall.
From a long and intentional menu, a few highlights. The spanner crab, sweet corn, aji amarillo topped with some white sturgeon caviar came as a small snack but hit with mighty flavour. The hokkaido scallop tiradito with tiger's milk and koji was silky and sharp, with a subtle kick down the throat. I didn't want it to end. Then the baby sweet corn, kombu with brown butter arrived. I looked at it, expected little, and WTF, it burst with flavour.
The sommelier proved he was playing at another level. After pouring my wine, he paused, smiled, and said, "No wait, I can do better." Next thing, a Champagne Collet Rosé appeared. No rigid pairing, just genuine instinct and care.
The toothfish, marinated for 60 hours with miso and finished with smoked beurre blanc, was phenomenal. The wagyu course was the knockout. Every single component wowed; earthy mushroom, parsnip like art, potatoes so good I want them served like that for the rest of my life. And that's before even mentioning the beef itself, which was immaculate.
What struck me most was the understanding of ingredients and preparation. Every dish, every component, is so layered it makes you stop and think.
The attention to detail extends beyond the kitchen too. The team had carefully curated a extensive ceramic collection. Each piece unique and chosen to enhance not just the presentation but also the immense flavour. The cutlery, perfection. I'd buy them, but afraid it is far out of my reach. You're taken care of here. Spill something and it's cleaned before you notice. And not to be weird but even the bathrooms are curated, with His and Her perfumes. Keep an eye out for details I'm sure even my attentive eye missed.
Exhibition isn't just dinner. It's precision and heart stitched together. They knock it out of the park.
