@exhibitionrestaurant in Brisbane feels like what happens when food nerds turn full scientist. Their grasp of time, fermentation, and transformation, runs so deep it borders on madness; in the best possible way. It’s not just cooking; it’s extracting hidden layers and applying the same obsessive mastery across every dish.

From making their own sake to distilling dill oil to crafting their own cereal based miso. Exhibition in Brisbane is pure craft. The kind of craft that makes you wonder why Australia doesn’t do Michelin stars, because if they did, this place would have them. Even if, like the best, they do it for the love of the game rather than a sign on a wall.

What struck me most was the understanding of ingredients and preparation. Every dish, every component, is so layered it makes you stop and think.
